Any type of lock you put on your trailer will be a theft deterrent. I recommend using the Fastway Universal Coupler Lock, part # FA86-0015-316, because it can mount on 1-7/8, 2 and 2-5/16 inch couplers and it fits on a wide variety of coupler types. The Diversi-Tech lock will be harder and noisier to break off than the Master Lock coupler lock which is a better deterrent for thieves.

The only difference between the Curt Double Lock Gooseneck Hitch and the Curt EZr Double Lock Gooseneck Hitch is that the EZr has a center locator tool which makes for drilling the hitch ball opening hole much easier. Aluminum trailer tires typically have a really nice seal but they also are not normally rated for as high a weight capacity on an 8 bolt wheel. They are a softer metal so they do tend to be more durable when it comes to flex. There are a few different jaw types on a 5th wheel hitch. A slide bar can be found on the less expensive hitches like a Pro Series PS30094. A slide bar, while secure, is going to provide the least snug fit and you will notice the king pin making some noise.
Next are double jaws and are much more secure and cut down quite a bit on the movement and noise of the king pin. Many Reese, Curt, and other brand mid-level and higher end hitches have the double locking jaw design like # RP30075.
